From Bodegón to Gourmet: Reimagining a Classic

For Fernando Santarelli, the path wasn’t preordained. He initially resisted involvement with Comedor Balcarce, the restaurant founded by his grandfather, Segundo, in 1961. However, family tradition ultimately prevailed. Today, Santarelli leads the historic bodegón – a traditional, unpretentious eatery – known affectionately (and somewhat ironically) as “El Vómito” for its famously generous portions and hearty fare, particularly its signature milanesa. PuntoBiz reports that Santarelli initiated a modernization effort in 2021, aiming to attract a younger clientele without sacrificing the restaurant’s core identity.

This desire to evolve led Santarelli beyond the walls of Comedor Balcarce. In 2020, he launched Negre, a restaurant specializing in smoked meats, inspired by a trip to New York City. The venture began with delivery sales before establishing a physical location at Jujuy e Italia. He subsequently added the sandwich shop Bocatino and, more recently, the pizzeria Mítico, now located at Güemes 2587. Pizzerias and Sandwich Shops: A New Recipe for Success

While Neapolitan and New York-style pizzerias gain traction, Rosario’s traditional pizzerias are adapting. Via Apia, a fixture on Av. Pellegrini 961 since 1965, founded by Santiago and Elías Echen, exemplifies this approach. Now under the direction of Rodrigo, Elías’ grandson, the pizzeria is navigating a changing market. However, Rodrigo’s passion lies elsewhere: the art of the sandwich.

He is preparing to open Sagrado, a bar-sandwich shop at San Lorenzo 2400. Rodrigo has spent seven years honing his skills through baking courses and self-study. Via Apia itself underwent a complete renovation in 2024, coinciding with its 60th anniversary, preserving its essence while updating its aesthetic.

The Menditeguy and Spanish Roots

The Monreal family’s story is one of both preservation, and expansion. Ignacio and Lucía Monreal carry the name of their family’s sandwich shop, located on Entre Ríos and San Lorenzo, founded by their grandfather, a prominent figure in the Spanish community and a regular participant in the Fiesta de las Colectividades. Ignacio has been managing Monreal for five years and is now poised to launch Patán, a tapas bar celebrating his family’s Spanish heritage, in May.

“My family always was particularly open and never forced me, but I got involved and ended up liking it,” Ignacio told PuntoBiz. He acknowledges the family’s historical reluctance to expand, prioritizing the preservation of the sandwich shop’s traditional character. However, he seeks to grow and forge his own path. The Monreal sandwich shop is particularly renowned for its Menditeguy – a turkey sandwich with hollandaise sauce and grated cheese – a Rosario staple. In 2023, the shop underwent a facade renovation, replacing its iconic neon sign with a more modern design. PuntoBiz covered the changes.

Recognizing Rosario’s Culinary Icons

The evolution of these establishments isn’t happening in isolation. Both Via Apia and Comedor Balcarce are included in the “Catálogo de Bares y Bodegones Notables de Rosario” (Catalog of Notable Bars and Bodegones of Rosario), a recognition approved by the city council in 2024 to celebrate the city’s culinary icons. This initiative underscores the value placed on these establishments, not just as businesses, but as cultural landmarks.

The trend suggests a broader shift in Rosario’s food scene. Rather than allowing family businesses to fade, the next generation is actively investing in their future, adapting to changing consumer preferences while retaining the core values that made them successful. This isn’t simply about updating menus or renovating spaces; it’s about a fundamental reimagining of what these businesses can be. The success of these ventures will likely encourage other family-owned establishments to follow suit, further solidifying Rosario’s position as a dynamic and evolving culinary destination.
