Michelin Guide 2026: Bras Loses Star, L’Ambroisie Downgraded

The Michelin Guide delivered a seismic shift in its 2026 rankings on Tuesday, announcing the demotion of Parisian institution L’Ambroisie from three stars to two, and, in a twist of fate, a one-star reduction for Le Suquet in Laguiole, a restaurant once famously relinquished by its chef, Sébastien Bras, who simply didn’t want the pressure. The downgrades, announced to Agence France-Presse (AFP), signal a notable recalibration at the highest echelons of French gastronomy.

The loss of L’Ambroisie’s third star is particularly striking. The restaurant, located in the historic Place des Vosges, had held the coveted three-star ranking for decades, representing a cornerstone of classic French fine dining. The change comes after Shintaro Awa took the helm in 2025, succeeding Bernard Pacaud, who led the restaurant for forty years. Maintaining a three-star rating immediately after a change in leadership is a rare feat, and Awa now faces the challenge of reasserting L’Ambroisie’s position.

A Chef Who Didn’t Want Stars

The story of Le Suquet, and Sébastien Bras, is far more complex. Bras initially requested to be removed from the Michelin Guide in 2018, overwhelmed by the relentless scrutiny that came with maintaining a three-star rating. The Michelin Guide, although, surprisingly reinstated the restaurant with two stars in 2019, asserting the guide’s independence from individual chefs’ preferences. Now, with this latest downgrade to one star, the saga takes another unexpected turn. As The Guardian reported in 2017, Bras’s decision stemmed from a desire to cook without the constant anxiety of judgment.

This isn’t an isolated incident of restaurants losing stars. Le Chabichou in Courchevel (Savoie) and Relais de la Poste in Magescq (Landes) also lost a star each. Jean Coussau, the chef at Relais de la Poste, a family-run establishment that had held two stars for fifty-five years, expressed his disappointment, stating to AFP, “I am not in the spirit of the times,” and defending “a true French cuisine.” His reaction underscores the evolving landscape of culinary tastes and the challenges faced by restaurants clinging to traditional approaches.

Beyond the Downgrades: A Wider Trend?

The Michelin Guide’s international director, Gwendal Poullennec, noted that the number of downgrades was relatively limited, suggesting a degree of resilience among top-tier restaurants. He commented to AFP that quality establishments are finding a path to economic sustainability, even amidst broader difficulties in the restaurant industry since the Covid-19 pandemic. However, the changes at L’Ambroisie and Le Suquet are undeniably significant.

The downgrades aren’t the only shifts occurring within the Michelin landscape. More than twenty starred restaurants have closed or changed direction, including Parisian landmarks Dame de Pic and Yam’Tcha. Seventeen restaurants have lost their single star in 2026 across France, including Helen in Paris and La Mère Germaine in Châteauneuf-du-Pape (Vaucluse). These closures and transformations reflect the pressures facing the industry, from rising costs to changing consumer preferences.

The situation at L’Ambroisie is particularly interesting given the transition to a new chef. Shintaro Awa, now tasked with regaining the restaurant’s former glory, will need to balance respecting the legacy of Bernard Pacaud with introducing his own vision. The restaurant’s future will be closely watched as a test case for how successfully a new chef can navigate the challenges of taking over a highly-regarded establishment.

The Legacy of Bernard Pacaud

Bernard Pacaud’s four decades at L’Ambroisie established a standard of classic French cuisine that defined the restaurant for generations. His meticulous attention to detail and commitment to using the finest ingredients earned him widespread acclaim and a loyal following. Le Suquet, under Sébastien Bras, similarly focused on terroir, drawing inspiration from the Aubrac region and its natural surroundings. The contrast between these approaches – Pacaud’s classicism and Bras’s regional focus – highlights the diversity within the Michelin-starred world.

The downgrades also raise questions about the Michelin Guide’s criteria and its responsiveness to evolving culinary trends. While the guide emphasizes consistency and quality, it also faces pressure to reflect innovation and changing tastes. The decision to remove a star from Le Suquet, despite Bras’s initial desire to be excluded from the guide, suggests a complex relationship between chefs and the ranking system.

The full Michelin Guide 2026 rankings will be announced on Monday, March 16th, in Monaco. The unveiling will undoubtedly provide further insight into the guide’s current priorities and the direction of French gastronomy.
