Avans Veggie Challenge: Healthy Plant-Based Eating Tips for Students

Avans University of Applied Sciences is currently engaging students and staff in a ‘Veggie Challenge’, prompting a look at how to adopt a more plant-focused diet in a healthy way. We spoke with Tessa Stevens of ProVeg to understand the nuances of healthy plant-based nutrition.

ProVeg, a Dutch foundation, initiated the Veggie Challenge not to convert the world to vegetarianism, but to inspire greater consumption of plant-based foods. “The idea of the challenge is to inspire people to eat more plant-based,” explains Stevens.

Why Shift Towards Plant-Based Eating?

The motivations for embracing a plant-based diet, or simply reducing meat consumption, are multifaceted. A significant driver is the environmental impact of meat production. According to research from Stanford University, meat production contributes substantially to greenhouse gas emissions, deforestation, and pollution . The environmental burden extends to dairy production as well . The Netherlands’ Nutrition Centre advises limiting meat intake to less than 500 grams per week, citing links between processed and red meat consumption and increased risks of cancer and cardiovascular disease .

Navigating the ‘Schijf van Vijf’ – The Dutch Dietary Guidelines

Healthy plant-based eating isn’t complicated, but requires mindful attention to nutritional balance. The Dutch ‘Schijf van Vijf’ (Wheel of Five) from the Netherlands Nutrition Centre provides a framework for a balanced diet, outlining recommended food groups and portion sizes . The guidelines emphasize a high intake of vegetables and fruits (fresh, not canned), whole grains (like whole-wheat bread and brown rice), unsaturated fats (such as olive oil and margarine), and sugar-free beverages (like water). While meat and dairy are included in the ‘Schijf van Vijf’, their inclusion doesn’t imply necessity.

Essential Nutrients and Plant-Based Sources

Animal products contain vital nutrients for the human body. Vitamin B12, for example, is exclusively found in animal sources. Individuals excluding meat must ensure adequate dairy intake. If dairy is also excluded, the Netherlands Nutrition Centre recommends B12 supplementation . Stevens notes that these supplements don’t necessitate to be expensive, readily available at pharmacies like Kruidvat. Vitamin B12 is crucial for blood cell production, and deficiency can lead to anemia and fatigue.

Beyond B12, meat provides proteins, iron, and vitamin B1. To obtain these nutrients without animal products, focus on incorporating nuts, seeds, legumes, soy products, and whole grains into your diet. “If you eat a varied diet, it shouldn’t be a problem to get enough of these nutrients,” Stevens assures.

The Role of Meat Substitutes: A Closer Look

Meat substitutes can be a convenient option, but their nutritional value varies considerably. Many are highly processed, which generally makes them less healthy than whole, unprocessed foods and links them to similar health concerns as red meat. The healthiest meat substitutes are tofu, tempeh, and seitan. These options closely resemble whole foods, are minimally processed, and offer substantial protein and iron content with lower levels of unhealthy fats.

Recent research from ProVeg indicates that a growing number of meat substitutes now meet the nutritional criteria set by the Netherlands Nutrition Centre regarding fat, salt, sugar, protein, B12, iron, and fiber content . Currently, approximately 26% of meat substitutes meet these standards, compared to only 11% of actual meat products.

Practical Tips for a Smooth Transition

“Don’t make it too difficult for yourself,” Stevens advises. “You can make changes in little steps. For example, switch to soy milk instead of cow’s milk with your breakfast.”

And, as previously mentioned, B12 supplementation is crucial for those avoiding all animal products.

It’s significant to remember that plant-based doesn’t automatically equate to healthy. A diet consisting solely of processed vegan foods, for example, would lack the nutritional benefits of a whole-food plant-based approach. Prioritizing whole, unprocessed foods – fruits, vegetables, whole grains, legumes, nuts, and seeds – is fundamental.
