Expectation Alters Sweetness Perception: Study on Sugar & Artificial Sweeteners

Our brains may be more easily swayed by what we expect from food than by the food itself, a latest study suggests. Research published this week in JNeurosci reveals that anticipating a sweet taste—even if it’s from an artificial sweetener—can significantly alter how our brains experience pleasure. This finding could have implications for how we approach dietary changes and the language we use around healthy eating.

The study, led by Elena Mainetto from Radboud University and Margaret Westwater from the University of Oxford, investigated the neural mechanisms behind our enjoyment of sweet flavors. Researchers found that the brain’s reward system can be “tricked” by expectations. When participants believed they were consuming a sugary drink, but were actually given a sweetener, activity increased in the dopaminergic midbrain—a key area associated with reward processing. Conversely, anticipating a “diet” drink diminished the pleasure derived from real sugar.

The Power of Expectation in Sweetness Perception

The research team screened 99 healthy adults, averaging 24 years of age, ensuring they had similar initial perceptions of both sugar and artificial sweeteners. Participants’ brain activity was monitored using fMRI scans although they tasted various beverages. The results demonstrated a clear link between expectation and enjoyment. Falsely believing a drink contained sugar boosted the appeal of artificial sweeteners, while the expectation of a diet beverage lessened the enjoyment of actual sugar.

“This could mean that this brain area, the dopaminergic midbrain, processes increased nutrients or calories of sweet flavors, which supports rodent work showing that this brain region is important for sugar seeking,” explains Westwater. This suggests the midbrain isn’t simply registering sweetness, but also evaluating the perceived nutritional value of the flavor.

Beyond Taste: How Labels Influence Our Brains

The implications of this research extend beyond simply understanding how we experience taste. The study highlights the powerful role of labeling and messaging in shaping our perceptions of food. Researchers suggest that emphasizing the positive attributes of healthier alternatives—such as being “nutrient-rich” or having “minimal added sugars”—may be more effective than focusing on what they lack, like calories or sugar content.

This isn’t necessarily new clinical information, Westwater notes, but she hopes the findings will influence how neuroscientists approach the study of diet and eating habits. The way we frame food choices can profoundly impact our brain’s response, potentially making healthier options more appealing.

What Does This Mean for Dietary Choices?

It’s important to understand that this study doesn’t suggest artificial sweeteners are inherently “better” or “worse” than sugar. Rather, it underscores the complex interplay between our brains, our expectations, and our food choices. The research doesn’t offer a quick fix for dietary challenges, but it does provide valuable insight into the psychological factors that influence our eating behavior.

The study’s findings align with broader research on the placebo effect, where expectations can influence physiological responses. In the context of food, this means that our beliefs about a food’s healthfulness or indulgence can directly impact how much we enjoy it. This is particularly relevant in a society saturated with diet culture and often conflicting nutritional information.

While the study provides compelling evidence, it’s important to acknowledge its limitations. The research was conducted with a relatively small sample size of 99 healthy adults. Further studies are needed to determine whether these findings generalize to more diverse populations, including individuals with different dietary habits or pre-existing health conditions.

This anticipation can be shaped by external cues, such as labels or marketing messages.

The researchers emphasize that this work highlights the importance of expectancy in both behavioral and neural correlates to sweetness processing. The next steps involve exploring how these findings can be applied to develop more effective dietary interventions. Specifically, researchers are interested in investigating whether reframing healthy food options—emphasizing their nutritional benefits rather than their limitations—can promote more positive eating habits. Further studies will also aim to clarify the long-term effects of these expectation-based interventions and identify individuals who may be particularly susceptible to these effects. Elena Mainetto, one of the lead researchers, is continuing this line of inquiry at Radboud University, focusing on the role of dopamine in inference and planning related to food choices.
