Neeraj Chawla, owner of Vaishno Rasoi in Rajouri Garden, embodies this struggle. He took over the eatery a year ago, stepping away from a family business to forge his own path. Now, he finds himself facing a financial and emotional dilemma. While closing shop might make economic sense, the fear of losing face – what he calls “beizatti” – keeps him going, even as he’s forced to rely more heavily on coal and wood for cooking. According to Zomato, Vaishno Rasoi currently operates out of 18, D.D.U Market, Main Najafgarh Road, Rajouri Garden, and is open from 11:30 am to midnight.

Chawla’s experience isn’t isolated. From KK Da Dhaba in Tagore Garden to Khadak Singh Da Dhaba in Malviya Nagar, similar stories are unfolding. Pankaj Dawar of KK Da Dhaba has already begun to cut back on fried items, while Rajinder Singh Bhandari of Khadak Singh Da Dhaba hasn’t received an LPG cylinder in a week. These establishments, long-standing neighborhood favorites, are grappling with a reality where basic operational costs are spiraling out of control.

The LPG Crunch and the Black Market

The current situation stems, in part, from a revised government priority order for natural gas allocation. With the crisis in West Asia impacting global energy markets, LPG production has been placed alongside CNG and piped cooking gas, allegedly leading to a supply crunch for commercial users like hotels and restaurants. This scarcity has, predictably, fueled a thriving black market. Reports indicate that a cylinder typically priced between ₹1,000 and ₹1,500 is now being sold for anywhere between ₹3,000 and ₹4,500. This dramatic increase is crippling for small businesses operating on tight margins.

Chawla’s daily sales, once averaging around ₹12,000 on a decent day, are dwindling as the shift to coal and wood doubles cooking time and reduces efficiency. He’s already been forced to lay off two staff members. The impact extends beyond individual eateries; it’s a systemic challenge affecting the entire Delhi food ecosystem.

Adapting to Survive: From Menu Changes to Electric Alternatives

The response to this crisis is multifaceted. Restaurants are rethinking their cooking methods, streamlining menus, and exploring alternative energy sources. Secret Ingredient, a restaurant consultancy, is experiencing a surge in inquiries from businesses seeking guidance. Sid Mathur, founder-director of Secret Ingredient, explains they are helping brands identify electric equipment partners and redesign menus to reduce gas dependency.

Even established chains are feeling the pinch. RollsKing, Bomba Pizzeria & Taqueria, and Sorbo in Gurugram are all adjusting their operations. Bomba, known for its Neapolitan pizzas, has temporarily removed gas-guzzling pizza bases from its MG Road menu. Sorbo has taken a more radical approach, switching to electric fryers and steamers, using apple wood for its pizza oven, and even pausing some iconic slow-cooked dishes like Moroccan Lamb Tagine.

RollsKing, while facing challenges in transitioning to electric tawas (which heat up slower than traditional gas tawas), is committed to maintaining operations. Arjun Toor, co-founder of RollsKing, acknowledges a temporary slowdown in prep times but anticipates improvements as staff become accustomed to the new systems.

Government Intervention and the Road Ahead

Delhi Food and Supplies Minister Manjinder Singh Sirsa has acknowledged the issue and announced steps to address it. The government has increased the allocation of commercial LPG cylinders from 20% to 50% of the average daily consumption and is taking action against black marketing and hoarding. The allocation has been raised from 1,800 to 4,500 cylinders per day, according to the minister.

However, the long-term solution remains uncertain. The LPG crisis highlights the vulnerability of small businesses to external economic shocks and the importance of diversifying energy sources.
